* Biga and Poolish starters are like a sourdough starter – they are fermented pieces of dough that leaven a batch of fresh dough. They are made with just a pinch of fresh yeast (less than a quarter of an ounce) and left to ferment for 16 hours, after which they can leaven a batch of dough over 100 pounds. Biga is a stiff dough, made with water, flour, and yeast. Poolish has a consistency of pancake batter, and is made with the same ingredients.
